1 Cup Dry Quinoa
2 Cups of Water
½ Cup of Lemon Juice
3 TBS Balsamic Vinegar
4 TBS Olive Oil
1 TBS Minced Garlic
1 TSP Salt
½ Cup of Chopped Cilantro
1 Small Onion, Chopped
1 Red Pepper, Diced
½ Cucumber, Diced


  1. Cook quinoa according to the instructions on the package. Set aside to cool.
  2. Whisk together lemon juice, vinegar, oil, garlic, salt, and pepper.
  3. Add onion, cilantro, red pepper, and cucumber to the quinoa.
  4. Poor the lemon juice mixture over the quinoa mixture.
  5. Serve chilled.
